This amazing salad is the superhero of the vegetable world: with a combination of crunchy vegetables and all the goodness packed in quinoa sprouts, this can be a strong accompaniment to a light meal.
1 tablespoon sprouted quinoa seeds
1 tablespoon oil
1 splash vinegar
salt and pepper (optional)
Slice the avocado, pepper and cucumber, sprinkle the germinated quinoa on top and season with oil and vinegar (or lemon if preferred). You can also add fresh oregano if you can find it and substitute quinoa sprouts with alfa-alfa sprouts which can be bought in health food shops. Like sprouted beans, quinoa contain a variety of precious nutrients: vitamins A, B, C and E, Calcium, Iron, Magnesium, Niacin, Phosphorus, Potassium, Amino Acids and Protein.
