Looking for a matcha crumpets recipe to make at home? Here’s one you can try for a scrumptious brunch or afternoon tea. You can serve them toasted with butter , with jam or with fresh fruit.
Makes 12.
INGREDIENTS
1/2 teaspoon matcha green tea powder
175 gr plain flour
7 gr dried yeast
150 ml warm milk
1/2 teaspoon sugar
90 ml warm water
1/2 teaspoon salt
1/4 teaspoon baking powder or baking soda

METHOD
To make matcha crumpets, mix the flour and the matcha tea with the yeast and sugar in a bowl then add the warm milk to make a smooth batter. Mix vigorously for a couple of minutes then rest for 20 minutes in a warm place covered with a tea towel or cling film. If you have more time, you can let the batter rest for 30 minutes. Mix the salt and baking powder in warm water then add to the batter a bit at a time. Rest, covered, for another 20 minutes.
Please note: if you’d like your crumpets to be greener in colour, add more matcha powder.
Heat a large frying pan and place the cupcake silicone moulds on the hot surface. Pour about 2 tablespoons of the batter in each (depending on the size of the pan, you may need to repeat the process twice). Cook for at least 5 minutes until you start to see the batter changing colour. If it looks too runny cook for another 2 minutes. Heat the grill and move the pan with the crumpets under the grill for 5 minutes checking constantly that the top doesn’t become too brown. Make sure the crumpets are cooked inside by inserting a skewer in the middle: if it comes out clean, they are ready.
