These matcha whoopie pies wth matchamallows are a vibrant green colour and they would make a great impact at a Halloween party!
Makes 16 whoopie pies
INGREDIENTS
125 grams plain flour
2 teaspoon matcha green tea
4 grams baking powder
1 teaspoon lime zest
grated zest of 1/2 lime
small pinch of salt
90 grams butter
75 grams sugar
1 egg
3 tablespoons single cream
1 teaspoon lime juice
3 tablespoons milk
1/2 teaspoon vanilla extract
For the marshmallows (matchamallows):
1 egg white
70 grams sugar
40 grams powdered sugar (optional)
1 teaspoon vanilla extract
3 tablespoons water
small pinch of salt
1/4 teaspoon matcha green tea
METHOD
For the whoopie pies, mix the dry ingredients together (flour, baking powder, matcha tea, salt) in a large bowl. In a separate bowl, either using a mixer or by hand, cream together the butter and sugar. In another bowl mix together the single cream and the lime juice, then add the egg and the milk. Mix this into the creamed butter. Add the lime zest.
Combine the dry mix with the wet mix.
Pre-heat the oven at 180 degrees Celsius. Spoon or pipe with a piping bag the pie mixture onto a baking tray covered with a lightly oiled sheet of baking paper. Bake for 12-14 minutes and check regularly to prevent the pies from browning. Once baked, leave to cool completely.
Prepare the matchamallows cream by whisking the egg white with a pinch of salt until stiff. In a pan, add the sugar and the water and boil on a medium/high heat for 5 minutes until the sugar has melted. Pour the sugar syrup into a jug and add the syrup very slowly, almost drop by drop, to the whisked egg white. After adding all the syrup, add the vanilla extract and the matcha tea. Optional: for a thicker marshmallow add powdered sugar, whisking well.
Assemble the whoopie pies by gluing two pies together with a dollop of matchamallows. Store in the fridge.
