We all know that KFC has a secret blend of spices so please go ahead and be creative with your own personalised blend! I simply used what I had in my kitchen cupboard but feel free to add your favourite spices to the mix. Hen of the woods is a very satisfying wild mushroom growing at the base of trees (so you may want to forage away from dog walking paths!).
Serves 1 as a main or 2 as a starter
INGREDIENTS
100 gr hen of the woods
1 egg
50 gr plain flour (I used gluten-free flour)
1 pinch of salt and cayenne pepper
1 tablespoon milk
20 gr butter
METHOD
Cut the hen of the woods into 1 cm strips. If you prefer thicker strips make sure you cook them for at least 2 minutes longer, turning them to prevent them from burning.
Prepare the batter by mixing together in a bowl the egg, the flour, the milk and the seasoning. Dip the mushroom strips in the batter.
Heat the butter in a frying pan on a medium heat and fry the battered mushroom strips for 2 minutes, turn over, cook for another 2 minutes and turn twice more to ensure they are cooked through (5-7 minutes in total). Voila, lunch is served!
