Mugwort or artemisia vulgaris has a slightly bitter aroma that goes very well with the sweetness of peas. A vegan recipe that will please everybody.
100 gr drained cooked peas
10-20 gr plain flour
1/2 teaspoon curry powder
1 pinch of salt and pepper
6 mugwort leaves
1 clove garlic
Oil for frying
In a blender blitz together all the ingredients – if the mixture looks too loose add a bit of flour.
Once smooth rest the mixture in the fridge for about half an hour.
Heat the oil in a shallow frying pan; drop a heaped tablespoon of the pea mixture into the hot oil. Cook for 2 minutes and turn over. Do this a few more times until the patties are cooked through (at least 10 minutes.
