Fluffy Sourdough and Coconut Milk Bao with Beef

Yes, I am obsessed with bao. No biggie.


For the steamed buns:
50 gr sourdough starter
75 gr coconut milk
100 gr plain flour

For the filling:
50 gr minced beef
50 gr defrosted frozen spinanch
2 garlic cloves, chopped
1/2 fresh red chilli, sliced
1 tablespoon oil (olive oil or vegetable oil)
Small pinch of salt and pepper


Mix the flour, coconut milk and sourdough starter in a bowl until you get a smooth dough. Leave to rest covered in clingfilm for 12 hours.

Divide the dough into 6 balls and place inside muffin cases.

Steam the buns for 15 minutes; meanwhile prepare the filling by heating the garlic in oil for one minute, then add the mince, seasoning, and cook for 10 minutes. Add the spinach and cook for another 5 minutes.

Cut the buns in half and fill with meat (it will be messy like a Sloppy Joe’s). Add one or two slices of fresh chilli on top.
