Get some greens in you with this spinach pizza base.
50 gr sourdough starter
50 gr water
100 gr plain flour
1 small pinch salt
50 gr frozen chopped spinach
2 tablespoons tomato sauce
1/2 mozzarella ball
1 teaspoon olive oil
1 pinch oregano/dried herbs
Defrost the spinach in the fridge for at least 3-4 hours then steam for 5 minutes. Drain any excess water.
Mix the sourdough starter, flour, water and salt in a bowl. Work well for 5 minutes then cover with cling film and rest for 2 hours. Work again then let the dough rest for another 6-12 hours, covered in cling film.
Add the chopped spinach to the dough, mix well and let the dough rest again covered for another 6 hours.
Preheat the oven at 200 degrees Celsius. Roll the pizza base onto a baking tray or silicone tray, top with tomato sauce, mozzarella cut or torn into pieces and oregano. Drizzle with oil and bake in the oven for 10-15 minutes.
