This is one of those dishes that is best to enjoy in moderation, but when you do get the chance to make it, please savour each morsel with delight!
Serves 1, makes 10 fritters
INGREDIENTS
10 pickled elderflower heads (see recipe for pickled elderflower capers)
2 tablespoons self raising flour
1 egg
vegetable oil for frying
METHOD
Drain 10 picked elderflower capers. Make the batter by mixing the flour and egg, then dip the pickled elderflower into the batter by picking them by the stem.
Dip 3-4 battered elderflower capers in boiling vegetable oil and cook for 2 minutes, turning half way through. Serve immediately.
