Pancakes with Mahonia Jam

You may not have heard of Mahonia, but I am sure that you will soon start to notice it in your walks if you pay attention. With its distinctive blue berries and spiky leaves, Mahonia is an ornamental plant in many gardens and green spaces.


1 egg
50 gr flour
80 gr milk
1 pinch salt
1 pinch sugar
1 teaspoon vegetable oil
1 tablespoon Mahonia jam


Mix the egg, flour, milk, salt and sugar in a bowl until you get a runny batter. In a fying pan heat the oil, spreading it around with some kitchen paper. Pour the batter and swirl it around the pan. Cook for 1-2 minutes until golden on one side, then flip over and cook another 1-2 minutes.

Spread with the jam and serve.
