We all know we need to reduce the amount of sugar in our diet, but this is nettle syrup: the literature on nettle mentions health benefits including reducing inflammation and allergies.
Use this syrup diluted in still or sparkling water: you can even make ice lollies with diluted syrup.
200 gr nettle
100 gr mint
peel of 1 lemon
200 gr sugar
500 ml water
Boil the nettle, mint, lemon peel and sugar in water for 15 minutes. Let it cool down and infuse for at least an hour and filter through a fine mesh before bottling. You can sterilise bottles in the hottest setting of the dishwasher or putting them in a hot oven (remove rubber seals if present).
Usually nettle syrup recipes would use 1 kg sugar and 1 lt water with 500 gr nettle. I used very little sugar so you need to store the syrup in the fridge or freezer.
