Some people say mallow (Malva) is an acquired taste (ie, they simply don’t like it!) but if you cook it like okra (one of my favourite vegetables) you will find it to be very pleasant. Mallow is good for digestive health.
INGREDIENTS
30 gr mallow leaves
100 gr chopped tomatoes
2 tablespoons olive oil
2 spring onions, chopped
1 pinch salt
METHOD
Cook the spring onions in the olive oil on a medium heat for 2 minutes, then add the mallow leaves, roughly torn, and cook for another 2 minutes. Add the tomatoes and salt and reduce the liquid, cooking for about 15 minutes, then serve.
