Mahonia has a lovely blueberry flavour and is full of vitamins: the berries are full of vitamin C. Careful when you pick them as your hands will turn a bright fuchsia! Wear gloves when handling the berries. To make the jam you will need to sieve out the seeds and the result will be a glossy, jelly-like beautiful purple jam.
INGREDIENTS
300 gr Mahonia berries
250 gr sugar
50 gr water
METHOD
In a large pan boil the berries with a little water on a medium heat for 10 minutes until the berries are soft. Take off the heat and cool, then pass through a sieve ensuring none of the seeds pass through.
Bring back the berries to the boil adding the sugar. Cook on a medium heat for 15 to 20 minutes until the jam thickens – check by putting a drop of jam on a plate: if it doesn’t run it’s ready.
