I found some chives and stinging nettle in one of my walks, so I decided to make some savoury muffins.
As I didn’t own any muffin moulds I went to buy some non-stick silicone muffin moulds and silicone kitchen tongs. When handling nettle it is advisable never to touch it with your bare hands so I washed the nettle and placed it in the pan using the tongs. The muffin cases are silicone so they don’t stick.
This recipe makes 6 small muffins.
INGREDIENTS
50 gr stinging nettle
50 gr chives, chopped
2 tablespoons olive oil plus 1 tablespoon for cooking
2 tablespoons milk
6 tablespoons self-raising flour
1 egg
A pinch of salt
2 cloves garlic, chopped
METHOD
Gently fry the garlic with 1 tablespoon of oil until golden, then add the washed chopped chives and nettle using kitchen tongs, sweating the herbs in the pan for 5 minutes. Leave to cool.
In a bowl mix the egg, milk, 2 tablespoons oil and salt until combined. Add the flour and mix until there are no lumps.
Pour about 2 tablespoons of the mixture into silicone moulds and bake in a pre-heated oven at 190 degrees for 18 minutes.
