Chilli con Carne with Coca-Cola Caramelised Onion

What to do with some leftover Coca-Cola? Simple: use it to caramelise an onion to go in a chilli con carne!

INGREDIENTS

200 gr minced beef
200 gr cooked Borlotti beans
1 whole chilli
1 red onion, chopped
2 tablespoons olive oil
1 teaspoon cocoa powder
1 tablespoon barbecue sauce
3 tablespoons tomato passata
1 pinch salt
1 teaspoon mixed herbs (oregano, rosemary)
1/2 glass of Coca-Cola

METHOD

In a frying pan, gently sweat the onion with 1 tablespoon of olive oil on a medium heat. After 2 minutes add the cola and simmer for 10 minutes. Set half of the onion aside, and in the same pan add the other tablespoon of oil, the beef, salt and herbs.
After the mince is brown (about 10 minutes) add the tomato, barbecue sauce, caramelised onion and beans.
Simmer on a low heat for 20 minutes, adding a bit of water if the chilli becomes too dry.
