Gluten-free and Dairy-free Strawberry Pancakes

Gluten-free and Dairy-free Strawberry Pancakes recipe: no sugar either!

INGREDIENTS:

4 medium strawberries

3 tablespoons gluten-free flour

1 medium organic egg

1 tablespoon oil

ground cinnamon

METHOD:

In a blender whizz the egg and flour together, then add the strawberries. Mix until there’s no clumps.

Heat a shallow non-stick pan then add half of the oil for the first batch of pancakes (approximately 5 small pancakes).

Pour the pancake mixture in the pan with a spoon (1 spoonful per pancake), cook for 2-3 minutes and flip over cooking a further 2-3 minutes.

Serve immediately with a dusting of cinnamon.

Another option is to make crepes instead and fill them with chopped fresh fruit.
