Summer Salad Recipe: Cherries, Cherry Tomatoes, Avocado and Green Beans

Cherry saladINGREDIENTS:

50 gr green beans

10 cherries

4 cherry tomatoes

1 avocado

1 tablespoon olive oil

1 teaspoon cider vinegar

Optional: sunflower or pumpkin seeds for extra crunch and protein

 

METHOD:

Boil or steam the green beans for 3-5 minutes so they remain crunchy. Add the beans to a bowl with the cherry tomatoes cut in half, the cherries also halved and with the stone removed, 1 sliced avocado and the dressing made of olive oil and cider vinegar. Mix well and serve immediately.
