Here’s a quick, easy and tasty recipe when you are stuck for ideas of what to eat for dinner. This recipe has a high protein content.
INGREDIENTS
2 small turkey breast slices
4 cherry tomatoes
6 cherries, pitted
50 gr green beans
8 olives (green and black)
1 avocado
2 teaspoons red pesto with sundried tomatoes
1 tablespoon olive oil
1 pinch herbs
METHOD:
Spread the red pesto onto the turkey slices and sprinkle with herbs. Heat 1 tablespoon of olive oil and quickly pan fry the turkey. After a couple of minutes add the olives. Cook for a further 5 minutes.
Boil or steam the green beans for 5 minutes.
Mix the green beans, pitted cherries, halved cherry tomatoes and diced avocado, add a few drops of lemon juice, serve with the turkey.
