Recipe: marinated chicken with okra and red peppers

1 organic chicken breast

8-10 green olives

½ lemon

1 tablespoon grainy mustard

2 tablespoons olive oil

6 okras

1 red pepper

1 clove garlic optional




Marinate the chicken overnight or for one day in the fridge: cover the chicken with chopped lemon, mustard and green olives (you can add one clove of garlic to taste).


Chop the okra and red pepper into chunks and place at the bottom of a roasting tray drizzled with olive oil. Top with the marinated chicken and drizzle the remaining oil all over.


Oven cook at 200 degrees for 30 minutes or until the chicken is cooked through.
